چکیده:
دانش بومی علمی بر پایه تجربه بومیان و سازگار با زیست بوم خاص خود میباشد که کاربرد صحیح آن بخشی از نیازهای انسانی را برطرف می نماید. ثبت این دانش غالبا بر دوش مردم نگاران است. یکی از زمینههای مهم در پژوهشهای مردم نگارانه ثبت دانش بومیان در زمینه نحوه طبخ غذا با استفاده از گیاهان خودروی مرتعی در محل سکونت آنها است. این پژوهش با هدف جمعآوری دانش بومی مردم منطقه گوغر بافت در زمینه طبخ انواع غذاهای محلی با استفاده از گیاهان خودرو مرتعی انجام شده است. روش اصلی در این تحقیق، اطلاعات یابی به شیوه مستقیم و جمعآوری دادههای خام بود. در همین راستا از تابستان 1398 تا پایان بهار 1399، به دفعات به منطقه مورد مطالعه مراجعه شد و دانستههای سنتی مردم گردآوری گردید. روشهای جمعآوری اطلاعات در این تحقیق شامل مصاحبه آزاد، مصاحبه نیمه ساختار یافته و مشاهده مشارکتی بوده است. مصاحبهها به صورت هدفمند از خبرگان محلی منطقه صورت پذیرفت که شناسایی آن ها به صورت روش گلوله برفی انجام شد. در این پژوهش 15 گیاه که در طبخ خوراکهای سنتی و محلی به کار برده میشد شناسایی گردید. با استفاده از این گیاهان، مردم محلی 20 غذای مختلف را تهیه می کردند. بنابراین با توجه به گستردگی تنوع فرهنگی و اقلیمی موجود در کشور، گنجینه عظیمی از دانش مربوط به نظام های غذای بومی حاصل از گیاهان خودروی مرتعی وجود دارد که ثبت، بررسی و تحلیل این نوع از نظام غذایی بومی رو به زوال اهمیت زیادی دارد.
Indigenous knowledge is based on the experience of the natives and is compatible with its own ecosystem, and its correct application solves part of human needs. Recording this knowledge is often on the shoulders of ethnographers. One of the important fields in ethnographic research is recording the knowledge of natives in the field of how to cook food using rangeland edible plants in their place of residence. This research has been done with the aim of collecting local knowledge of the people of Goghar Baft region in the field of cooking a variety of local foods using rangeland plants. the main method in this research was to find information in a direct way and collect raw data. In this regard, from the summer of 2018 to the end of the spring of 2019, the study area was visited several times and the traditional knowledge of the people was collected. The data collection methods in this research included free interview, semi-structured interview and participatory observation.
