چکیده:
با توجه به سهم قابل توجه گوشت مرغ در سبد غذایی خانوارها، قیمت تمام شده و تغییرات آن از لحاظ مالی برای مصرفکنندگان و تولیدکنندگان دارای اهمیت است. در این پژوهش بر اساس بودجه فعالیت واحدهای مرغداری در استان فارس، قیمت تمام شده مرغ زنده در ظرفیتهای مختلف، فصول و انواع سیستمهای مکانیزاسیون محاسبه و تغییرات آن بررسی شد. همچنین شاخصهای سهم هزینه نهاده، اندازه بهینه تولید، کششهای خودقیمتی و متقاطع با برآورد تابع هزینه محاسبه شدند. دادههای مورد استفاده از 88 واحد مرغداری گوشتی به روش نمونهگیری تصادفی جمعآوری شد. نتایج نشان داد که، قیمت تمام شده مرغ زنده در فصل زمستان در مقایسه با سایر فصول بالاتر است. کاهش میانگین قیمت گوشت مرغ با افزایش ظرفیتهای تولیدی حاکی از آن است که هر چه ظرفیت مزرعه کوچکتر باشد، تولید غیراقتصادیتر میگردد. بهکارگیری تکنولوژی مدرنتر در واحدهای مرغداری منجر به افزایش هزینههای ثابت و قیمت تمام شده محصول گردیده است. مقدار کشش هزینه نسبت به تولید به طور میانگین در حدود 876/0 است. بنابراین تولید مرغ گوشتی در استان دارای بازده صعودی نسبت به مقیاس است. با محاسبه کششهای خود قیمتی مشخص شد که تقاضای نهادهها نسبت به تغییرات قیمت کششناپذیر است. مقادیر بهدست آمده از کشش جانشینی موریشما، حکایت از قدرت انتخاب بسیار محدود صنعت مرغداری استان، در جانشین کردن عوامل تولید با یکدیگر دارد. با توجه به پایین بودن قیمت تمام شده در مرغداریهای با ظرفیت بالاتر و صعودی بودن بازده نسبت به مقیاس، برنامهریزی در جهت توسعه واحدهای با مقیاسهای بالاتر تولید ضرورت دارد.
Due to significant contribution of poultry meat in household food basket the cost price and its changes are of great importance for consumers and producers. In this study, based on the activity budget of poultry farms in Fars province, the cost price of live broiler in different farm–sizes, seasons and mechanization systems was calculated and its changes were investigated. Also, the indices of input cost share, optimal production size, self-price and cross elasticities were calculated by estimating the cost function. The results showed that the cost price of live broiler is higher in winter compared to other seasons. The decrease in the average price of broiler with the increase in farm-sizes indicates that the smaller the farm–sizes, the more uneconomical the production becomes. The use of more modern technology in poultry units has led to an increase in fixed costs and the cost price of the product. The cost elasticity of production in the study area was about 0.876 on average. Therefore, production of broiler in Fars province has increasing returns to scale. Calculating own-price elasticities showed that demand for inputs is inelastic by price changes. The values obtained from the Morishima substitution elasticity indicate the very limited choice of the poultry industry in the province to replace the factors of production with each other. Given the low cost of higher size poultry-farm and its increasing returns to scale, therefore, planning is needed to develop broiler farms in this area in order to achieve higher production scale.
