خلاصة:
گندم از نظر سطح زیر کشت و مقدار برداشت، از مهم ترین محصولات کشاورزی ایران است. ایران با وجود سهم یک درصدی از جمعیت حدود ٥/٢ درصد گندم جهان را مصرف می کند. از نظر آمارهای بین المللی، ایران هشتمین مصرف کننده گندم در دنیا است که بخش عمده آن به صورت نان مصرف میشود. به جز نان که معمول ترین نوع استفاده از گندم به حساب می آید، این محصول در تهیه ی فرآورده های دیگری مانند رشته، ماکارونی، انواع شیرینی وغیره به کار می رود. گندم روزانه بخش عمده ای از انرژی، پروتئین، املاح معدنی و ویتامین های گروه مورد نیاز مردم جهان را تامین میکند و به دلیل اهمیتی که فرآورده های گندم در الگوی مواد غذایی مردم ایران دارد حدود ٤٠ الی ٤٥ درصد کالری و ٥٠ درصد پروتئین مورد نیاز روزانه هر فرد را تامین می نماید. در این تحقیق به وضوح نشان دادیم که با افزایش میزان سطح گلوتن از صفر (نمونه شاهد که همان بهترین نمونه مرحله اول است) تا ٤٠ درصد در فرمولاسیون نان ارائه شده در این پژوهش، بر میزان رطوبت به طور چمشگیری افزوده شد. در زمینه افزودن گلوتن به محصولات نانوایی و اثر آن بر میزان رطوبت نتایج مشابهی نیز گزارش شد. و محققین علت کیفیت را قابلیت گلوتن در جذب آب به میزان ٢/٨ برابر وزن خشک خود و ممانعت از خروج آن در طی فرآیند پخت دانستند.
In terms of the area under cultivation and amounts of harvest, wheat is one of the most important crops in Iran. Iran consumes 5.2% of global wheat despite constituting only 1% the world population. Consistent with international figures, Iran ranks eighth among world wheat consumers, a major part of which is consumed in the form of bread. Except for bread, which is the most conventional type of using this crop, wheat is also used in making other products such as noodles, pasta, types of sweets, etc. On a daily basis, wheat accounts for a major part of energy, proteins, mineral salts, and vitamins needed around the world, and because of its importance in the food chain of Iranian people, it supplies around 40-45% calories and 50% of proteins needed by each person daily. This study indicates that increasing the amount of gluten from zero (the control sample, which is the best sample of the first stage) up until 40% in the bread formulation resulted in the significant increase of moisture. Similar findings also revealed the addition of gluten to bakery products and its effects on moisture levels. Meanwhile, researchers have considered the cause of quality to be the gluten’s absorption of water by 2.8 times its dry density and its inhibition of it in the process of cooking.
