چکیده:
مقدمه: با توجه به افزایش تولید، مصرف و مزایای تغذیه ای روغن های خوراکی تهیه شده به روش پرس سرد، بررسی سلامت و ایمنی مصرف روغن کلزای تهیه شده به روش پرس سرد انجام شد که از طریق مقایسه فاکتورهای هماتولوژی، بیوشیمیایی و آنزیم های کبدی بین موش های صحرایی دریافت کننده روغن کلزای تهیه شده به روش پرس سرد و موش های صحرایی دریافت کننده روغن کلزای تصفیه شده، صورت پذیرفت.
مواد و روش ها: بر طبق راهنمای "آزمایش مواد شیمیایی- مطالعه سمیت در جوندگان، دوز تکرار 90 روزه"، 56 موش صحرایی به پنج گروه تقسیم بندی شدند. گروه ها شامل: گروه 1 با جیره غذایی معمولی، گروه 2 دریافت کننده غذای معمولی و روغن کلزای تصفیه شده با دوز (5 میلی گرم بر کیلوگرم وزن بدن) و گروه های 3 ، 4 و 5 نیز علاوه بر غذای معمولی، دریافت کننده روغن کلزای تهیه شده به روش پرس سرد، هر کدام در دوزهای به ترتیب 5 / 2 و 5 و 5 / 7 (میلی گرم بر کیلوگرم وزن بدن) بودند. در پایان آزمایش تغییرات وزن بدن، مصرف غذا وآب، علائم مسمومیت، مشاهدات بالینی و معاینات چشم پزشکی در طول دوره (90 روز) بررسی شد.
یافته ها: نتایج پژوهش در زمینه تغییرات وزنی، تعیین پارامترهای خونی و فاکتورهای بیوشیمیایی در تمامی موشهای صحرایی بررسی گردید. میزان کاهش تری گلیسرید و آنزیم های کبدی (AST,ALT) در گروههای دریافت کننده روغن کلزای پرس سرد در مقایسه با گروه دریافت کننده روغن کلزای تصفیه شده از لحاظ آماری معنی دار بود (0/05>P).
نتیجه گیری: باتوجه به نتایج حاصله، روغن کلزای تهیه شده به روش پرس سرد در دوزهای تجویز شده، بر فاکتورهای هماتولوژی، بیوشیمیایی و آنزیم های کبدی موش صحرایی اثری نداشت.
Introduction: The increase in the production, consumption and nutritional benefits of oils extracted by cold press method has been studied. The safety of colza oil extracted by this method has been studied and compared with refined colza oil in respect of hematological, biochemical and liver enzymes factors in rats.
Materials and Methods: According to the guideline for chemical testing the study of oral toxicity in rodents, 56 rats were divided into five groups: group 1 were fed with the normal diet, group 2 were fed by the normal diet and refined colza oil with the dose of 5 mg/kg of body weight and groups 3, 4 and 5 were fed by the cold pressed colza oil with the doses of 2.5, 5 and 7.5 mg/kg of body weight respectively, in addition to their normal diet. During the ninety days periods, some factors namely body weight, food and water consumption, toxicity, clinical observations, ophthalmic examinations, were studied.
Results: Weight variation, blood parameters and biochemical factors of rats were investigated and accordingly showed significant decreases in triglyceride level and liver enzymes (ALT, AST) among the group fed by the cold pressed colza oil as compared to the group receiving refined colza oil (The difference was considered statistically significant (P<0.05)).
Conclusion: Colza oil extracted by the cold press method as described earlier did not affect the hematological, biochemical parameters and liver enzymes in rats.
