چکیده:
سابقه و هدف: از ویژگیهای فیزیکی مهم فرآوردههای گوشتی میتوان به ظرفیت نگهداری آب، قدرت امولسیفیکاسیون، افت پخت و بافت اشاره کرد. راه کارهای مختلفی بهمنظور بهبود این ویژگیها وجود دارد.یکی از این راه کارها، بهبود فرآیندهای تولید از جمله فرآیند عملآوری، فرآیند مخلوط کردن و فرآیند پخت است. راه کار موثر دیگر، بهینهسازی فرمولاسیونها با به کارگیری ترکیبات عملگرا میباشد. عمدهترین مواد عملگرای مورد استفاده در فرآوردههای گوشتی شامل نمکهای غیرآلی (سدیم کلراید، سدیم فسفات، سدیم کربنات و سدیم سیترات)، پروتئینهای گیاهی (از جمله پروتئینهای سویا، گندم و نخود)، پروتئینهای حیوانی (از جمله کازئین و آلبومین)، نشاستهها (از جمله نشاسته سیبزمینی و ذرت) و هیدروکلوئیدها (از جمله کاراگینان و آلژینات) میباشند. از اینرو در این مقاله، عمدهترین مواد عملگرای موثر بر کیفیت فیزیکی فرآوردههای گوشتی معرفی میشوند. در این تحقیق سعی شده است از مطالب علمی قدیمی و پایهای و همچنین مطالب علمی جدید موجود در کتب و مقالات مختلف چاپ شده استفاده شود.نتایج: امروزه بهمنظور بهبود ویژگیهای فیزیکی فرآوردههای گوشتی، مواد عملگرای مختلفی در فرمولاسیون این محصولات استفاده میشود. این مواد میتوانند دارای منابع مختلف آلی و غیر آلی باشند. مقادیر مورد استفاده این مواد میتواند در محصولات مختلف، متفاوت باشد. برای مثال سدیم فسفات، تا 5/ 0 درصد، سدیم کلراید تا 2 درصد، نشاسته سیب زمینی تا 4 درصد و کاراگینان تا 5/ 0 درصد استفاده میشوند.نتیجهگیری: بهمنظور تولید یک محصول گوشتی با ویژگیهای فیزیکی قابلقبول از نظر مصرف کننده، میتوان از ترکیبات عملگرا از جمله نمکهای غیرآلی، پروتئینها و نشاستهها استفاده کرد. این ترکیبات با بهبود ظرفیت نگهداری آب، خواص امولسیفیکاسیون و بافتی کمک قابل توجهی به کیفیت نهایی محصول میکنند.
Introduction: Water holding capacity, emulsification properties, cooking loss and texture are important pHysical characteristics of processed meat products. There are several ways to enhance these characteristics, including improving the production methods (such as tumbling, mixing and cooking optimization) and optimizing the formulations. Nowadays, several types of functional ingredients are incorporated in meat products formulation. The main functional ingredients used in meat products are inorganic salts (such as sodium chloride, pHospHate, citrate and carbonate), plant proteins (such as soy, wheat and pea proteins), animal proteins (such as caseinate and albumin), starches (such as potato and corn starch) and hydrocolloids (such as carrageenan and alginate). Thus, in this context, the main functional ingredients which have significant effects on the pHysical quality of meat products are introduced. In this research, old and new scientific reports are used from various published books and articles.Results: Nowadays, functional ingredients are used in formulations, in order to enhance the pHysical properties of meat products. This material is prepared from different organic and inorganic sources. Common dosages of functional ingredients may be different depending on product type. For instance, sodium pHospHate, sodium chloride, potato starch and carrageenan are used respectively 0-0.5, 0.5-2, 1-4 and 0-5 % (w/w).Conclusion: In order to produce a meat product with acceptable pHysical properties, it is essential to use functional ingredients such as inorganic salts, plant proteins and starches.
