چکیده:
مقدمه: فلزات سنگین از جمله آلاینده های زیست محیطی هستند که مواجهه انسان با بعضی از آنها از طریق آب و مواد غذایی می تواند مسمومیت های مزمن و بعضا حاد ایجاد نماید. بر این مبنا پروژه حاضر به اندازه گیری و ارزیابی 4 فلز سنگین آهن، مس، سرب و کروم در
50 نمونه خمیر و نان سنتی پرداخته و تاثیر نوع فر )فر سنتی و دوار(، دما و زمان پخت، سطح و pH خمیر را در میزان این فلزات مورد بررسی قرار داده است.
مواد و روش ها: نمونه برداری نان بطور اتفاقی از سطح شهر تهران انجام شد و مقدار فلزات با دستگاه طیف سنجی جذب اتمی اندازه گیری گردید. نتایج حاصل، در مقایسه با دو استاندارد مبنا ]ایران) ISIRI ( و جهانی) WHO/FAO ([ و با بهره گیری از نرم افزار SPSS مورد تجزیه و تحلیل قرار گرفت.
یافته ها: نتایج ارزیابی نشان داد مقدار کروم در تمام نمونه ها کمتر از حد قابل تشخیص دستگاه بود. افزایش مقدار فلز سرب پس از پخت در هیچکدام از نمونه ها از نظر آماری اختلاف معن ادار نداشت ) P>0.05 (. افزایش مقادیر آهن در نمونه های پخته شده در فر دوار و سنتی و
افزایش مس در نمونه های نان لواش و تافتون پخته شده در فر سنتی از نظر آماری اختلاف معنا دار داشت (P<0.05) .
نتیجه گیری: نتایج آنالیز بیانگر این بود که میانگین میزان فلز سرب و آهن )بدلیل غنی سازی آرد در ایران( در نمونه ها کمی بیش تر از مقادیر مشخص شده توسط /FAO WHO بود. همچنین با تعیین میزان دریافت روزانه قابل تحمل (PTDI) سرب، کروم، آهن و مس توسط مصرف نان این میزان کمتر از مقادیر استاندارد مشخص شده توسط /FAO WHO می باشد. ولی خاصیت تجمعی فلزات سنگین در بدن و اثرات سوء آن مسئله مهمی است که لازم است مورد توجه قرار گیرد.
Introduction: Heavy metals are environmental pollutants and can cause chronic and acute
toxicity in human body through exposure to polluted water and food. The aim of the present
study is to measure the amount of four heavy metals (Lead, Chromium, Copper, Iron) in 50
samples of Iranian traditional dough and bread to determine the influence of ovens, pH, dough
surface, temperature and baking time.
Materials and Methods: Samples of dough and bread were randomly collected in Tehran.
The amounts of metals were measured using Atomic Absorption Spectrometry. The results
were analysed and compared with national and international standards using statistical
software (SPSS).
Results: The results indicated that the amount of Chromium in all the tested samples were
less than the limit of detection. Increased amounts of Lead in the samples after baking were
not statistically significant
(P> 0.05). Increased amounts of Iron in rotary and traditional oven and increased amounts of
Copper in Lavash and Taftoon breads in traditional ovens were statistically significant (P<
0.05).
Conclusion: The analytical results showed that the average amounts of Lead and Iron (due to
flour fortification in Iran) were more than the values specified by the WHO/FAO. This
organization defines a Provisional Tolerable Daily Intake (PTDI) of 4 metals per person per
day by consuming bread, however the amounts of measured heavy metals were less than the
standard values specified by WHO/FAO. Therefor the cumulative effect of heavy metals is
important and should be considered in body tissues.
