چکیده:
مقدمه: امروزه یکی از عمده ترین معضلات بخش کشاورزی و صنایع غذایی ایران، واردات %۹٠ روغن خوراکی مصرفی است. اهمیت تامین داخلی روغن مورد نیاز بوسیله شناسایی واریته های با کیفیت و حاوی ترکیب مناسب اسیدهای چرب، از جهت کاهش واردات و خروج ارز از کشور، غیر قابل انکار می باشد. هدف از این پژوهش، ارزیابی شیمیایی روغن 7 رقم جدید کانولا بوده تا بهترین واریته شناسایی گردد.
مواد و روش ها: در این تحقیق 7 واریته کانولا از موسسه اصلاح و تهیه نهال و بذر کرج انتخاب و روغن هر یک پس از استخراج توسط حلال مورد سنجش آزمون های شیمیایی شامل ترکیب اسیدهای چرب، درصد ترکیبات غیر قابل صابونی، استرول، توکوفرول، زمان پایداری، فلزات مس و آهن قرار گرفت.
یافته ها: درصد روغن ارقام در محدوده 23/ 46-33 % ، بالاترین میزان ترکیبات توکوفرولی برای رقم NK-OCTANS و بالاترین میزان ترکیبات استرولی برای رقم GKH-Olivia بود. ارقام NRX-3621 بالاترین میزان آهن و GKH-Olivia بالاترین میزان مس و رقم GKH-3705 بالاترین زمان پایداری را داشتند. ترکیبات غیر صابونی شونده در محدوده 1/3 % الی 88/ 1 % بود. اسیدهای چرب PUFA در محدوده 21/ 31-59/25 درصد و MUFA بین 43/ 59 و 02/ 66 درصد بود.
نتیجه گیری: تمامی ارقام در صفات مورد آزمون اختلاف معنی داری با یکدیگر داشتند. اسید اولئیک اسید چرب غالب و اسید اروسیک به میزان ناچیزی در روغن آنها یافت گردید. زمان پایداری این ارقام بالا بود و همگی به صورت میانگین، حاوی مقادیر بالایی از ترکیبات غیرقابل صابونی بودند و در نتیجه از ارزش بالایی جهت کشت گسترده و بهره برداری روغن برخوردار می باشند.
Introduction: Today one of the problems concerned with the agriculture and food industries
is the import of approximately 90% of edible oils. It is therefore important to identify the
chemical nature of an oil particularly the fatty acid composition in order to select the best
quality. The aim of the present work is to evaluate seven different varieties of Canola and
select the most suitable.
Materials and Methods: Seven different varieties of canola were obtained from Institute of
Seed Improvement, Karaj Station. The seeds were subjected to oil extraction by solvent
followed by the chemical analyses of the extracted oils namely fatty acid composition,
induction period determination, quantitative determinations of Copper and Iron, quantitative
determination of nonsaponifiable matter and qualitative and quantitative determinations of
sterols and tocopherols.
Results: The amount of the extracted oils for all the varieties examined ranged from 33.0 to
46.2%. The nansaponifiable matter content accounted for 1.88 to 3.10% where sterols were
the major fraction. Tocopherols namely γ and α tocopherols were present but there were
quantitative variations concerned with sterols and tocopherols in all the varieties examined.
Mono and Poly unsaturated fatty acids concentrations ranged between 59.40 to 66.02 and
25.59 to 31.21 respectively among the varieties examined.
Conclusion: All the varieties examined had significant differences concerned with the
chemical analyses. Oleic acid was the major fatty acid and traces of erucic acid were present
among the examined varieties. All the crude extracted oils had induction periods ranged
between 8.75 to 12.32 hours at 110˚C that might be considered satisfactory considering the
fatty acid composition.
