چکیده:
مقدمه: غلظت فلزات سنگین در روغنهای گیاهی یک معیار مهم برای ارزیابی کیفیت روغن شامل تازگی، خواص نگهداری، ذخیرهسازی و تأثیر آنها بر تغذیه و سلامت انسان میباشد. با توجه به تأثیر فلزات سنگین کممقدار بر سرعت اکسیداسیون روغن، شناسایی آنها ضروری می باشد. مواد و روشها: در این مطالعه غلظت فلزات سنگین شامل سرب، کادمیوم، جیوه، آرسنیک در مراحل مختلف تصفیه روغن سویا بررسی شد. فلزات سنگین در نمونههای روغن با استفاده از دستگاه جذب اتمیک اندازه گیری شدند. یافتهها: نتایج نشان داد که مهمترین فرآیند در حذف آرسنیک از روغن مربوط به مرحله خنثی سازی است که ۶۰ درصد کل آرسنیک خروجی از روغن را شامل میشود. بیشترین حذف جیوه مربوط به مرحله اضافه کردن گیرنده های فلزات و آنتی اکسیدانها است که احتمالا مربوط به چلاته کردن اسیدسیتریک میباشد. قسمت اعظم سرب در مرحله خنثیسازی به علت ایجاد صابون نامحلول از روغن در مرحله سانتریفوژ کردن خارج شده است. همچنین مرحله خنثیسازی تاثیر قابل توجهی در حذف کادمیوم از روغن داشته است. نتیجهگیری: با توجه به یافتههای فوق میتوان دریافت که مراحل خنثیسازی و اضافه کردن آنتیاکسیدانها و گیرندههای فلزات دو مرحله مهم در حذف فلزات سنگین از روغن میباشد.
Introduction: Heavy metals are important elements in the oil quality and determine the freshness, shelf life, storage ability and also affect the human health nutritionally. Therefore determination of heavy metals due to their effect concerned with the rate of oxidation is quite essential.
Materials and Methods: In this study, concentrations of heavy metals including Lead, Cadmium, Mercury and Arsenic during different stages of soya bean oil refining were studied using atomic absorption spectrometry.
Results: The results indicated that the most common stage in Arsenic reduction is the neutralization stage that eliminates 60% of the total Arsenic content. The main stage in Cadmium reduction is the deodorization that reduces 40% of the initial Cadmium. Major part of Mercury reduction is concerned with metal scavenger addition that is referred to chelating activity of citric acid that might be added during bleaching and deodorization stages. Neutralization has separation role and causes the reduction of lead as soap.
Conclusion: The results showed that neutralization and the addition of scavengers are the main parts in heavy metals reduction.
