مقدمه: آفلاتوکسینها متابولیتهای ثانویهای هستند که توسط برخی گونههای قارچ آسپرژیلوس در محصولات کشاورزی تولید شده و به دلیل اثرات جهشزایی و سرطانزایی در مصرفکنندگان از نظر بهداشتی، پزشکی و اقتصادی اهمیت زیادی دارند. هدف از این تحقیق مقایسه پرتوهای فرابنفش و تنگستن در کاهش آفلاتوکسین B1 در محیط آرد برنج میباشد.
مواد و روشها: آرد برنج آلوده شده با دو غلظت 50 و ng/g 100 از آفلاتوکسین B1 تولید شده توسط قارچ Aspergillus flavus در آزمایشگاه، در 5 زمان 10، 20، 30، 40 و50 دقیقه و 2 فاصله 7 و 14 سانتیمتر از منبع نور فرابنفش با طول موج 366 نانومتر و تنگستن 100 وات مورد پرتودهی قرار گرفت. سنجش آفلاتوکسین با استفاده از روش الایزای رقابتی و در دو تکرار انجام شد. میزان آفلاتوکسین با نمونههای شاهد با استفاده از نرم افزار تجزیه آماری SAS نسخه 9.1 توسط آزمون دانکن مورد مقایسه قرار گرفت.
یافتهها:نتایج نشان داد حداکثر (67 و 68%) و حداقل (14 و 18%) کاهش آفلاتوکسین B1 بعد از 50 و 10 دقیقه پرتودهی در فاصله 7 و 14 سانتیمتری به ترتیب توسط نور فرابنفش و تنگستن اتفاق میافتد. غلظت اولیه آفلاتوکسین B1 در نمونههای مورد بررسی تأثیری در میزان کاهش آفلاتوکسین بعد از پرتودهی نداشت اما کاهش فاصله تا منبع نور و افزایش زمان در معرض نور قرارگرفتن، موجب کاهش بیشتر آفلاتوکسین گردید (P≤0.01).
نتیجهگیری: هرچه فاصله بین آرد برنج آلوده به آفلاتوکسین B1 به منبع نور فرابنفش و تنگستن کمتر باشد کاهش آفلاتوکسین در اثر پرتودهی بیشتر رخ میدهد. در ضمن هرچه مدت زمان در معرض پرتو قرار گرفتن بیشتر باشد کاهش آفلاتوکسین هم بیشتر میشود. استفاده از این پرتوها در کاهش آلودگی مواد غذایی به آفلاتوکسین میتواند مورد توجه قرار گیرد.
<strong>Introduction: </strong>Aflatoxins are secondary metabolites produced by some species of <em>Aspergillus</em> fungus on agricultural products. They have great health, medical and economic significance due to mutagenic and carcinogenic effects on consumers. The purpose of this study is to compare ultraviolet and tungsten rays in reducing aflatoxin B<sub>1 </sub>in rice flour. <strong>Materials and Methods: </strong>Contaminated rice flour with two concentrations of 50 and 100 ng/g of aflatoxin B<sub>1</sub> that produced by <em>Aspergillus flavus </em>in the laboratory were illuminated at 5 times 10, 20, 30, 40 and 50 minutes, with two different distances of 7 and 14 cm from ultraviolet light source with wavelength 366 nm and tungsten 100 W. Aflatoxin content was measured using competitive ELISA in two replications. Aflatoxin levels were compared with control samples by SAS (Release 9.1, SAS Institute Inc., Cary, NC) software using Duncan test. <strong>Results: </strong>The results showed that maximum (67 and 68%) and minimum (14 and 18%) reduction of aflatoxin B<sub>1 </sub>occur after 50 and 10 minutes irradiation at 7 and 14 cm, by ultraviolet and tungsten light, respectively. The initial concentrations of Aflatoxin B<sub>1</sub> did not affect the test, but reducing the distance to the source of light and increasing exposure time led to a further reduction of aflatoxin (P≤0.01). <strong>Conclusion: </strong>Reducing the distance between rice flour and ultraviolet or tungsten ray source decreases aflatoxin further. On the other hand, the longer exposure to radiation, the more aflatoxin declines. The use of these rays can be considered in aflatoxin mitigation of food<strong>.</strong>
