مقدمه: یکی از روشهای آمادهسازی در فرآوری میوهها و سبزیها آبگیری اسمزی تحت فشار کاهش یافته ناپیوسته میباشد که به دلیل استفاده از دماهای پایین امکان تولید فرآوردههایی با بافت و رنگ مطلوب را میدهد. هدف از انجام این تحقیق بررسی اثرات متغیرهای فرآیند آبگیری اسمزی (فشار محیط، زمان تماس محصول با محلول، غلظت و دمای محلول اسمزی) بر روی شاخصهای کیفی فرآورده (تغییرات رنگ، بافت، جذب روغن) و دستیابی به شرایط بهینه فرآیند میباشد.
مواد و روشها: در این پژوهش از یک سیستم آبگیری اسمزی تحت خلاء استفاده گردید که شامل جار بیهوازی، سبد توری، پمپ خلاء، فشارسنج و دماسنج بود. با بررسی پارامترهای کیفی محصول محدوده دمای محلول اسمزی 30 تا 50 درجه سانتیگراد، فشار 500 تا 700 میلیبار، غلظت محلول اسمزی 30 تا 50 درصد و مدت زمان تماس محصول با محلول اسمزی 60 تا 180 دقیقه تعیین گردید. با استفاده از مدل آماری رویه پاسخ نقشه آزمایشها شامل 31 آزمون به دست آمد و نمونههای فرآوری شده در نهایت در دمای 108 درجه سانتیگراد، زمان8 دقیقه و فشار 320 میلی بار تحت خلاء سرخ شدند و سپس اثرات این پارامترها بر روی شاخصهای کیفی نمونه های فرآوری شده در سه تکرار مورد آزمایش قرار گرفتند.
یافتهها:پس از تجزیه و تحلیل دادهها، شرایط بهینه شامل دمای محلول اسمزی71/48درجه سانتیگراد، فشار 07/592 میلیبار، مدت زمان 92/62 دقیقه وغلظت محلول اسمزی 87/34 درصد حاصل شد. با انجام آزمایش بهینه با شرایط ذکر شده میزان تغییرات رنگ 63/13، جذب روغن g oil/100g dry basis82/14 و بافت78/2 N/mبه دست آمد.
نتیجهگیری:نتایج نشان داد که افزایش دمای محلول اسمزی سبب کاهش سختی بافت و افزایش تغییرات رنگ میشود. با افزایش غلظت محلول اسمزی میزان تغییرات رنگ، جذب روغن و سختی بافت کاهش مییابد.
Introduction: Vacuum osmotic dehydration is one of the methods of preservation of fruits
and vegetable. The aim of this work is the evaluation of the effects of variables in osmotic
dehydration process (ambient pressure, contact time of product and solution, concentration
and temperature of osmotic solution) on the quality factors of product (colour changes,
texture, oil uptake) and finally achieving the optimum process conditions.
Materials and Methods: A laboratory scale osmotic dehydration equipment including
anaerobic jar, grid basket, vacuum pump, barometer and thermometer were used. The
temperature range for osmotic solution (30 – 50° C), pressure (500-700 mbar), concentration
of the osmotic solution (30- 50%) and contact time (60- 180 min) were employed. The test
plans involving 31 tests were obtained by using response surface statistical models. The
frying was carried out at 108ºC for 8 min and 320 mbar.
Results: The optimum conditions of 48.71ºC for the osmotic solution temperature, 592.07
mbar for the pressure, 62.92 min for the time and 34.87% for the osmotic solution
concentration were obtained. By applying the mentioned optimum conditions, the colour
changes, oil absorption (g/100g) dry basis and texture (N/m) were found to be, 13.63, 14.82
and 2.78 respectively.
Conclusion: The result showed that by increasing the osmotic solution temperature, texture
rigidity is decreased and colour changes is increased. Colour changes, oil absorption and
texture rigidity are decreased with increased osmotic solution concentration
