Abstract:
مقدمه: پنیر سفید ایرانی فراپالوده دارای بیشترین سرانه مصرف در ایران میباشد. میتوان با بهینهسازی فرمولاسیون پنیر کمچرب
فراپالوده تیمارشده با آنزیم ترانسگلوتامیناز، به محصولی با ویژگیهای خوشایند بافتی و ارگانولپتیکی دست یافت. با این حال، فعالیت
احتمالی آنزیم ترانسگلوتامیناز طی دوره انبارمانی، ممکن است کیفیت محصول را پیش از رسیدن به دست مصرفکننده، به گونهای منفی
تحت تاثیر قرار دهد. از این رو، پژوهش پیشرو بر آن است تا تغییرات ویژگیهای رئولوژیکی و ارگانولپتیکی پنیر فراپالوده کمچرب
تیمارشده با ترانسگلوتامیناز را طی دوره انبارمانی مورد بررسی قرار دهد.

40 و 60 روز پس از تولید مورد ارزیابی قرار گرفت. ،20 ، آبپنیر( تولید و ویژگیهای فیزیکوشیمیایی، رئولوژیکی و ارگانولپتیکی آنها در 3
یافتهها: در تمامی مقاطع زمانی دوره نگهداری، نمونه شاهد پرچرب، از نقطهنظر پارامترهای سفتی تنش در نقطه گسیختگی، مدول یانگ،
مدول ذخیره و مدول افت، نرمترین نمونه بود و پس از آن به ترتیب نمونه کمچرب تیمارشده با ترانسگلوتامیناز و نمونه شاهد کمچرب قرار
داشتند. در ابتدای دوره نگهداری، بین پارامترهای سفتی نمونه شاهد پرچرب و نمونه کمچرب تیمارشده با ترانسگلوتامیناز، تفاوت
ولی نرخ افزایش این پارامترها برای نمونه تیمارشده با ترانسگلوتامیناز به گونهای بود که از روز چهلم )p ≥ معنیداری مشاهده نشد ) 0.05
افزایش سفتی پنیر تیمارشده با ترانسگلوتامیناز .)p < دوره نگهداری به بعد، بافت آن به مراتب سفتتر از نمونه شاهد پرچرب بود ) 0.05
باعث کاهش چشمگیر مقبولیت حسی آن شد ولی با اینحال، حتی در پایان دوره نگهداری نیز، ویژگیهای حسی این نمونه به گونه
.)p < چشمگیری بیشتر از نمونه شاهد کمچرب مورد پسند مصرفکنندگان واقع شد ) 0.05
نتیجهگیری: تیمار ترانسگلوتامیناز پنیر فراپالوده کمچرب، موجب افزایش سفتی و کاهش مطلوبیت بافت محصول طی دوره انبارمانی
میشود.
Introduction: Ultrafiltered (UF) Iranian white cheese has the highest per capita consumption
in Iran. Optimizing the formulation of transglutaminase -treated ultrafiltered milk makes it
possible to develop a low-fat UF cheese with desired textural and sensory properties.
However, persistence of active transglutaminase in cross-linking the cheese proteins during
storage may adversely affect the product quality before it reaches the consumer. Thus, the
present study aimed to monitor the changes in rheological and sensory properties of
transglutaminase –treated low-fat UF cheese during shelf-life.
Materials and Methods: A control full-fat (16% fat), a control low-fat (5.95% fat) and an
enzyme-treated low-fat (5.95% fat, 0.56 U transglutaminase/g protein, 8.79% retentate
replacement with whey protein concentrate) ultrafiltered cheese were produced and their
physicochemical, rheological and sensory properties were studied after 3, 20, 40 and 60 days
Results: Throughout the storage period, the lowest hardness parameters (fracture stress and
Young’s, storage and lost moduli) belonged to the control full-fat sample, followed by the
enzyme-treated and the control low-fat cheese samples. Hardness indices increased
continuously during storage for all the samples among which the enzyme-treated cheese
showed the highest rate of firming. This in turn led to significant difference (P<0.05) between
the control full-fat and the enzyme-treated low-fat cheese samples after 40 days of storage in
terms of hardness parameters. Increased texture hardness during storage was accompanied by
significant reduction (P<0.05) in consumer acceptance of enzyme-treated low-fat cheese but it
was still significantly more appreciated by consumers than the control low-fat sample.
Conclusion: Transglutaminase treatment of ultrafiltered milk results increase in hardness and
thus decrease in texture desirability of the resultant low-fat cheese during storage.
