Abstract:
مقدمه: در شمال غرب کشور به ویژه استان آذربایجان شرقی محصولی سنتی به نام کره نهره با محبوبیت بالا بین مصرف کنندگان تولیدمی شود که برخلاف تولید آن از خامه، از ماست برای تولید استفاده می شود. این مطالعه با هدف بررسی تاثیر روش تولید بر ویژگی هایتغذیه ای کره و ارزیابی مقایسه ای این محصول با نوع صنعتی با تاکید بر فاکتورهای خطر ساز بیماری های قلبی عروقی انجام گرفت.مواد و روش ها: نمونه های کره صنعتی و سنتی تهیه و پروفایل اسیدهای چرب و کلسترول با استفاده از کروماتوگرافی گازی تعیین وشاخص های آتروژنیک و ترومبوژنیک محاسبه شد. جهت بررسی تاثیر تغذیه با کره های تهیه شده، 40 عدد موش گونه ویستار به طورتصادفی به چهار گروه ده تایی شامل یک گروه شاهد با تغذیه عادی و سه گروه به ترتیب دریافت کننده کره صنعتی تخمیری، کره صنعتیغیر تخمیری و کره سنتی تقسیم بندی شدند. در پایان دوره تیمار 60 روزه، مقادیر سرمی کلسترول، تری گلیسیرید، LDL-C و HDL-C باروش رنگ سنجی مورد سنجش قرار گرفت.یافته ها: مطلوب ترین اندیس آتروژنیک و ترومبوژنیک، نسبت هیپوکلسترولمیک به هیپر کلسترولمیک و کلسترول در کره سنتی نتیجهگردید. این کره ها همچنین دارای مقدار بالاتری اسید لینولئیک کنژوگه بودند. در بررسی مدل بیولوژیکی، فاکتورهای لیپیدی سرمی درموش های تغذیه شده با کره سنتی نسبت به نمونه کنترل افزایش، اما در مقایسه با گروه مصرف کننده کره صنعتی کاهش یافته بودند.نتیجه گیری: در مجموع ضمن تاکید بر کاهش مصرف کره در وعده های غذایی، این پژوهش نشان داد که امکان تعدیل اثرات نامطلوب وبالابودن اثرات سلامتی بخش کره با تغییر روش تولید مقدور می باشد.
Introduction: In the Northwest part of Iran, a traditional product with high popularity among consumers is produced and is named “Nehre Butter”. This study is concerned to evaluate and compare the nutritional characteristics of this product with the industrial products, with a particular emphasis on the risk factors for cardiovascular disease.
Materials and Methods: Industrial and traditional butter samples were prepared and fatty acid profile and cholesterol content were measured using gas chromatography and atherogenic and thrombogenic indexes were calculated. In order to investigate the effect of feeding prepared butters, 40 Wistar rats were randomly divided into four groups of ten, including one control group and three groups were treated with fermented cream butter, non-fermented cream butter and traditional butter respectively. The end of the sixty days treatment period, serum cholesterol, triglycerides, LDL-C and HDL-C were measured using colorimetric methods.
Results: The most favourable thrombogenic and atherogenic indexes, hypercholesterolemic/ hypocholesterolemic ratio and cholesterol content were found in the traditional butter. The traditional butter also showed a high percentage of conjugated linoleic acid. In the case of the biological model survey, serum lipids were higher in the traditional butter fed rats as compared to the control, but lower than cream butter fed groups.
Conclusion: This study showed that the traditional butter due to its mild effects on health in comparison with the industrial ones is recommended, although moderate consumption is advised.
