Abstract:
مقدمه: در حین تیمار حرارتی مواد غذایی بین آمینواسیدها و قندهای احیا کننده واکنش میلارد رخ می دهد. 5- هیدروکسی متیل فورفورال (HMF) از محصولات حد واسط این واکنش است. با توجه به مضر بودن HMF و اهمیت تغذیه ای خشکبار، هدف این مطالعه اندازه گیری میزان HMF میوه های خشک و بررسی رابطه آن با خواص شیمیایی می باشد. مواد و روش ها: 50 نمونه از میوه های خشک پرمصرف بازار جهت اندازه گیری محتوای HMF توسط دستگاه HPLC جمع آوری شدند. ویژگی های شیمیایی با استفاده از روش های استاندارد مرسوم اندازه گیری شد. همبستگی بین میزان HMF و ویژگی های شیمیایی توسط آزمون همبستگی پیرسون بررسی شد. یافته ها: بیشترین و کمترین مقدار HMF مربوط به لواشک ( mg/kg 85/8569 ) و کشمش طلایی ( mg/kg 49/80) بود. بین میزان HMF و رطوبت مویز و کشمش تیره (p<0.05، r =-0.86) و بین میزان اسیدیته و HMF لواشک (r=0.81، p<0.05) و بین میزان HMF و مقدار قند کل خرما همیستگی معنی داری وجود داشت (r=0.81، p<0.05). نتیجه گیری: مقدار HMF موجود در میوه های خشک بالا و به مقدار میانگین mg/kg 19/ 2243 بوده که موجب ورود مقدار زیادی از آن از طریق رژیم غذایی به بدن می شود. بنابراین مطالعات بیشتری در زمینه بررسی زیست دسترسی HMF مورد نیاز است. همچنین نتیجه گرفته شد که ویژگی های شیمیایی بسته به شرایط نگهداری و فرآوری میوه ها ارتباط موثری با مقدار HMF خشکبار دارند.
Intoduction: During heat treatment of foods, reactions occur between reducing sugars and
amino groups of food components, known as the Maillard reactions. Five hydroxymethy
furfural (HMF) is an intermidiate compoud formed as the result of this reaction. The aim of
the present study was to examine HMF content of dried fruits and evaluate its relationship
with the chemical characterisatics.
Materials and Methods: Total of 50 samples from various types of dried fruits were
collected and subjected to quantitative HMF determinations employing HPLC apparatus. The
chemical properties of the selected fruits were measured using conventional standard
methods. Pearson analysis was performed to test any correlations between HMF content and
the chemical properties.
Results: The highest and the lowest amount of HMF contents were determined in fruit bread
(8569.85 mg/kg) and golden raisin (80.49 mg/kg), respectively. Correlation analysis between
the chemical properties and HMF content showed a negative relation inrespect of HMF and
moisture content of both currant and dark raisins (r= -0.86, p<0/05) and a positive correlation
between the acidity and HMF content of fruit breads (r=0.81, p<0.05) and also between total
sugar and HMF contents in date (r=0.81, p<0.05).
Conclusion: HMF content of the dried fruits was high with mean of 2243/19 mg/kg. This
might lead to high dietary exposure to this compound. Further studies are required to clarify
the extent of HMF bioavailability. It is also concluded that the chemical properties affected by
preservation and processing conditions are strongly related to the HMF content in different
fruits.
